Every child in the world is special, gifted, and wonderful. Encourage children to explore their strengths, feel successful, be confident in school, make friends, and most importantly be themselves. KUTV News Story – Wear Blue On 2/22

Erik promoted his anti bullying campaign on KUTV News last night! He is such an incredible person! I recorded it with my phone camera, so the quality is not great. KUTV will be posting the story on their website. Wear Blue On 2/22

Erik sent the email below out to family & friends & it spread like wildfire! Erik’s school, Altara Elementary, friends & family all over the world participated. Mark Koelbel from KUTV news caught wind of it and awarded Erik with the “Pay it Forward” award! Erik & his school will be on KUTV (channel 2) news tonight (2/29) @ 10:00! Erik also got to talk about the book that he illustrated & wrote with his Nanny (Peggy deAzevedo). It is titled “I’m Glad to Be Me”. Erik is going to use the “Pay it Forward” award money to print copies of his book & donate them to schools, hospitals, & the Ronald McDonald House! He is such an awesome boy, and I am proud that he is my son!

Everyone who gets this e-mail needs to listen up. Let’s see if we can get into the paper for this. On February 22 2012, lets everyone wear a blue shirt to protest against bullying. I don’t care what shade of blue it is. If you’re a kid pass this along to all your friends. If you go into a chat room tell everyone there to tell their friends. If you’re an adult pass this to all your friends. And tell everyone at work about it. I’m using the power of e-mail for this. Mark your calendars for Feb. 22, blue shirt day. Let’s go down in history for this. I don’t care if you get this e-mail 2000 times.

This is one of the awesome “pouch” dinners I have been raving about. Give it a try. It is super easy, quick, and delicious. The best part, there is no clean up. Just put the pouch in the trash bin. Easy as pie, mmmm pie!

Salmon/Red Snapper en Papillote

Ingredients

1 cup couscous
1 16oz wild caught sockey salmon, or 2 8oz red snapper filets
salt & pepper
oregano
parsley
1 whole lemon, thinly sliced
1 cup thinly sliced red onion
2 cloves minced garlic
1 cup grape tomatoes, cut in half
1 cup drained and quartered artichoke hearts
1/2 cup white wine
1 tablespoon butter

Directions

Preheat oven to 425 degrees F.

Rinse couscous in fresh cold water and drain. Lay out on piece of parchment paper and sprinkle with pinch of salt.
Cut parchment paper into 15 by 48-inch sheet. Fold in 1/2, unfold, then lay half on baking/cookie sheet.
Lay salmon or snapper diagonally on center of parchment paper that is on baking/cookie sheet.
Salt and pepper fish. Place herbs on fish along with thin lemon slices, 1/2 of red onion, and minced garlic.
Arrange couscous next to and around fish on all sides.
Lay halved grape tomatoes, artichoke hearts, and remaining red onion along top and outside of couscous.
Pour wine over fish and dot with butter.
Fold over edges of parchment paper, stapling if necessary, to create an almost airtight seal.
Bake in oven for 30 minutes.
Carefully open and serve (be aware of steam when opening the pouch, and be aware of bones in the fish).

Appeal Denied

I did not tell anyone because it made me so anxious but Brian went to London yesterday because the Crown Court was hearing the appeal for Jenny’s murder. A panel of three judges heard the appeal, reviewed all the evidence and testimony and heard new witnesses for the defense and after 2 hours denied his appeal stating that his conviction would stand. YEAH!!! He has no further options but to serve his life sentence.
Ann called this morning to give me the news. What a relief they don’t have to go through another trial. The Judge stated at the end of the review that Jenny was a nice girl and neither she nor her parents deserved this. Brian said it was nice of her to say because she had been very stern and all business up to that point.
